In Season Fig Preserves

Its time for an in season recipe. Figs are at the peak of there season in the south. They have a very subtle sweet taste, perfect for jam and preserves. Earlier this week Gavin and I rode our bikes to a local fig tree we found about a year ago. We have been waiting all summer for the figs to get ripe.
Every time we rode our bikes by we would check
to see if they were ripe yet.

Here is the yummy recipe.
(Figs can be substituted with any fruit in season)

Ingredients:

3 pounds figs (no stems) (about 9 cups)
4 cups sugar
3 lemons, very thinly sliced, seeds removed
a pinch of cinnamon and nutmeg

Preparation:

Wash, drain and stem figs. Place the figs and sliced lemons in the pot and pour over the sugar. Cook over medium-low heat until sugar is completely dissolved; reduce to low heat, stirring occasionally to prevent sticking. Add lemon slices. Cover and cook until figs are transparent and the syrup is thick, 2-3 hours. Then spread over anything!
